Every Christmas I make mincemeat, lots of it, store it in jars, give some to family and friends and make lots of mince pies. I like to try different things with it and one of the best things is these puff pastry pinwheels. So easy to make and eat. Enjoy!
- 1 x 375g puff pastry sheet
- Approx. 400g mincemeat (buy good quality jar of mincemeat or make the mincemeat yourself. I make my own, loosely based on the recipe from the Like Mam Used to Bake Cookbook)
- Flaked Almonds
- 1 x Egg wash
Pre-heat oven to approx. 180-200c. Unroll the pastry sheet. Spread the mincemeat evenly over the pastry. Roll up. Chill in the fridge for 20-30 minutes. Cut into circular slices (approx. 2cm thick) and place on a lined baking tray. Pop the flaked almonds on top and wash with the egg.
These will cook quickly – about 10 minutes. Cool on a wire rack. Best served warm and they reheat well too. Eat on their own or with a dollop of whipped cream.
