I love this time of year when Asparagus is in season and we eat it all the time here in this brief few weeks when you can get really great asparagus in the shops. This is a simple recipe, perfect starter or lunch or just a nice snack to go with a few drinks…
- Bunch of Asparagus
- Parma Ham
- Grated Parmesan Cheese
- Basil Leaves
- Olive Oil / Oil
- Black Pepper
Griddle or fry the asparagus in a pan, in a little oil for about 3-4 minutes. While the asparagus is cooking, grate the parmesan cheese and lay out the parma ham in small strips.
Take each spear of asparagus and place onto the piece of ham, sprinkle a little parmesan and wrap the ham around the asparagus. Do this for each one.
Place the parma ham wrapped asparagus back into the pan and lightly fry about 1-2 minutes turning to get each side.
On a plate lay out the asparagus, top with more grated parmesan and torn basil leaves, drizzle with olive oil & cracked black pepper. I had purple basil as well as the more regular green so I used a mixture, just green is fine though if that’s what you have.
