This is the simplest recipe, hardly a recipe really! But makes for very tasty little roast potato wedges that go down a storm in our house!
- Baby Potatoes
- 2 Sprigs of Rosemary
- 1 Garlic Clove, finely chopped
- Coarse Sea Salt
- Cracked Black Pepper
- Olive Oil
First thing to do is parboil the baby potatoes, this is the most important step. Fill a saucepan with water, place the baby potatoes into the pan with a pinch of salt. Bring to a light boil for about 7-8 minutes. Drain.
Preheat oven to 180. Slice the baby potatoes in half / quarter (depending on size) and place onto a baking tray. Add the garlic, rosemary leaves, salt & pepper, and a good glug of olive oil all over.
Bake for around 15-20 minutes – time will depend on your oven, but keep an eye on them and remove once crispy and golden.
