Lots of peaches and nectarines in the supermarkets at the moment and this is a lovely way to use them, paired with almond flavours. Easy to make and a tasty afternoon treat with a cup of tea… enjoy!
Ingredients (Makes 6 large muffins)
- 3 large eggs
- 100g golden caster sugar, plus a little extra for sprinkling
- Almond extract / flavouring (few drops)
- 25g melted butter
- 100g self-raising flour
- 25g ground almonds
- 1 large peach (or 2 smaller)
- Apricot jam/conserve
- 2-3 tbsp flaked almonds
Preheat oven to 180C (fan).
Whisk the eggs, sugar and almond flavour for around a minute (until foamy). Melt the butter and pour into the mixture, continue to beat until all combined. Fold in the flour, ground almonds & pinch of salt.
Slice the peaches.
In a 6 hole muffin tin, divide the beaten mixture. Add a blob of the apricot jam / conserve to the top of each. Arrange a few slices of peach on top. Sprinkle the almond flakes on top and a little sugar.
Bake for 20-25 mins. You can eat these warm (ideally with a little dollop of crème fraîche or you can leave to cool. They are probably best eaten the day of baking or the next day latest (if they last that long!).
