- Turkey breast

Wash the lettuce and chop the tomatoes, leave to the side.
Slice the turkey breast thinly and griddle or grill for about 3 minutes each side until nicely charred. One of the best things about this is that you can use the same griddle pan for everything as the ingredients just need to be warm not hot. Place the turkey pieces in a bowl to the side.
Add the slices of Halloumi directly onto the griddle pan, no oil. These will take a really short time – maybe 1 minute total as the pan will be very hot. Turn a few times to ensure you get the lovely dark lines of the griddle on the cheese. Remove from the griddle.
While the turkey and halloumi are cooking, you can slice the nectarine into wedges. Put the nectarine pieces into the pan, let them cook for about a minute, before drizzling them with honey and soy sauce. Move the nectarine wedges around the pan quickly so that the honey doesn’t burn or stick. They are done when they are starting to blacken and soften.
