BLT Sandwich

A blog about a sandwich – I know…  but it’s a good sandwich I promise! I cook and bake quite a lot here at home and this features at the top of the favorites list for my husband, one of the easiest things to make and this is what he loves! Sandwiches for dinner so…

What you need for 2 people…

  • 4 slices thick crusty white bread (never brown for this!)
  • 6 unsmoked back rashers
  • 1 head little gem lettuce
  • handful of cherry / plum tomatoes
  • 2 tbsp mayonnaise
  • 1 tspEnglish mustard
  • Black Pepper

Griddle pan on the hob with a tbsp of oil, add the rashers and griddle. While the rashers are cooking, in a small bowl mix the mayo and mustard together with a grind of black pepper. Wash the lettuce and dry well. Slice the tomatoes and the lettuce and mix together in a bowl.

Lay out the slices of bread and onto each slice spread the mayo mustard mix. On one of the slices for each sandwich, add the lettuce / tomato mix. When your rashers are cooked to your liking, add 3 to the top of this. Place the other slice of the bread on top. And cut in triangles (always!).
