A Canadian gin… while I was in Canada during the Summer we visited and took a tour of Dillon’s distillery, located in the heart of Ontario Wine country.
Dillon’s Small Batch Distillers was created by Geoff Dillon and Gary Huggins with an aim to restore Canadian spirits to their former glory. Dillon’s is among a number of craft distilleries, producing interesting and unique spirits now in Canada. The location of Dillon’s distillery is not by chance but due to it’s proximity to wonderful ingredients around the Beamsville and twenty valley areas – the distillery is located next to acres of farms and vineyards. The first products from Dillon’s were made from a base of grapes that would otherwise be thrown on the ground during the annual thinning process. They asked the growers to drop the grapes into baskets instead of the ground for them to ferment and distill. The full story of Dillon’s Distillery is on their website so do check them out.
Dillon’s have the very best of local ingredients, grain, botanicals, and herbs to use for their spirits. They make Rye, Vodka, Gin, Bitters, Fruit Spirits, Absinthe and Whiskey… we were able to try some of these on our tour too, as well as having a behind the scenes look at the distillery and distilling process. The produce a few different Gins, the one we left with is the Unfiltered Gin 22, but there’s also a Rose Gin, Cherry Gin and others.
The Taste- Unfiltered Gin 22
A classic distilled gin, crafted in a copper pot still by passing vapour through 22 different botanicals. This gin is cloudy (due to being unfiltered). Lots of Juniper, a woody pine element to it, clean and smooth gin. There’s citrus, lavender, a very slight hint of pepper and spice, more floral than herby. A warm finish but not a long one. No real aftertaste. Alc/Vol is 40%.
This gin definitely suits a martini (one of my very favourite cocktails). On Dillon’s website you will find lots of gorgeous cocktail recipes… this one jumped out to me using the unfiltered gin 22… all my favourite flavours in one drink – Strawberry Basil Gin 22 – recipe and details here
As a side note I loved their bitters and I’m only sorry we didn’t buy more when we were there… next time!
