The Best of May on Gin & Griddle

The only thing I could start this with is Yes Equality! On May 22nd this little country of ours voted yes to same sex marriage, giving equality to everyone to marry the person they love, regardless of gender. I wrote a post just before about why I was voting yes and I was so proud, emotional and delighted when the result came through on Saturday… incredible on social media, amazing atmosphere in real life in Dublin city on Saturday night. My favourite # was definitely following #hometovote the stories and the impact was unbelievable.

Asparagus! I adore asparagus so May is a great month full of lovely English asparagus – so much better tasting than it’s Peruvian or Spanish counterparts… this easy recipe of roasted asparagus with cherry tomatoes and parmesan featured on the blog earlier this month.

One of the most delicious experiences was in Las Tapas de Lola with 2 food blogging friends, Kate from Kate’s Kabin and Nollaig from Fascination Food. It had been a while since our last catch-up so it was well overdue. A couple of pre dinner cocktails in Opium and then to Las Tapas de Lola for the most gorgeous tapas, wine and ginormous gins! A super meal in a realy great spot that I can’t wait to return to, and of course wonderful company! Just look at the size of that Gin…

Last but not least a nice spot for a treat breakfast or brunch is The Restaurant in Brown Thomas, Dublin, We really enjoyed our breakfast, and such a lovely setting too.
