A really easy recipe, very few ingredients and high on taste and flavour. Because there are so few ingredients and its all about them in this dish, I use good quality chopped tomatoes and beans (this time it was De Cecco Tomatoes and Biona Organic Beans).
- 1 x Small Onion, finely chopped
- 1 x 400g Tin Mixed Beans
- 1 x 400g Tin Chopped Tomatoes
- Pancetta (about 120g)
- Fresh / Dried Herbs
- 1-2 Tbsp Olive Oil
- Creme Fraiche to serve (optional)
In a heavy based casserole style dish, add a tablespoon of olive oil and saute the chopped onion for around 4-5 minutes. Add the pancetta, and fry for a few minutes until the pancetta is browning. Drain the beans and add to the pot, with the tin of chopped tomatoes. Half fill the empty tomato tin with water and pour this in too.
I also added some fresh rosemary and parsely, dried oregano, a good grind of black pepper and cayenne chilli pepper for some spice! Use whatever nice fresh or dry herbs you have to hand that will add flavour to the dish according to your own preference.
Simmer for about 20 minutes and serve with a dollop of creme fraiche on top. I had this as is, for lunch, however you could add a green salad, rice, steamed green vegetables, a baked potato…
