There is just nothing like home made mayo… nothing you can buy in the shop will compare!
To make the mayonnaise you will need:
- 2 Egg Yolks (free range is best)
- 1 Tbsp Lemon Juice (Lime will work too, slightly tangier though!)
- 1 Tsp Mustard
- 1 Tbsp White Wine Vinegar
- 250 ml Olive Oil
- Pinch of Sea Salt & Lots of Cracked Pepper!
Whisk all ingredients except oil and salt / pepper, until well combined. Slowly add the oil, until it becomes thicker and creamier. Decant to a dish or jar if storing, stir well, add the salt & pepper. ..
