Recipe ~ Gin & Griddle’s Chicken Wings

I love chicken wings, like really love, I would travel far for good chicken wings!! Big fans of TriBeCa and Canal Bank Cafe … here is a quick recipe for baked chicken wings that taste good and fill the chicken wing void if you can’t get to your favourite wing restaurant!

Prepare the wings, snip the tip of the wings off and discard and separate the wings into 2 parts.

In a small bowl, mix together a couple tablespoons plain flour with smoked paprika, cayenne pepper and a pinch of chilli powder. Dip each wing into the floury mixture and place on a baking tray (I normally do this part in advance, prepping the wings and the flour part you can then pop them into the fridge until you are ready to bake).

Preheat the oven to about 180 degrees. Lay the wings on a baking sheet and drizzle with Franks Red Hot Wings Buffalo Sauce (you will find Franks sauces in most supermarkets). Place the wings into the oven – they will take around 45 minutes.

While the wings are cooking… in a saucepan melt 75g butter with about a 1/3 of the bottle of Frank’s buffalo sauce and warm gently.

Take the wings from the oven and place in a bowl, add the buffalo sauce and toss well in the sauce. Serve in a bowl lined with parchment or greaseproof paper (makes the washing up easier!).

Serve with celery and a blue cheese dip for the truly authentic wing experience and a side of sweet potato fries works a treat!
