Yes I know its Summer, or meant to be at least…and here I am with a soup recipe! I will say in my defence, its rainy, miserable and cold out and this soup is light and tasty and is a really lovely lunch dish. whatever time of year it is.
- 1 Tbsp Olive Oil
- 1 Onion, finely chopped
- 1 Clove of Garlic, finely chopped
- 1 Small Red Chilli, finely chopped
- 1 Tbsp Balsamic Vinegar
- 2 Tins Chopped Tomatoes
- 1 Tbsp Tomato Puree
- Basil (lots!)
- Salt & Pepper
Chop the onion and garlic. In a large pan add the olive oil and then the chopped onion and garlic. Followed by the chilli. Cook for a few minutes, then add the balsamic vinegar, salt and pepper. Continue to saute for another 5 minutes or so.
Add the tins of chopped tomatoes and 2 cans of water and the puree. Mix well. Add the basil leaves whole (lots of them!) and stir well. Bring the soup to the boil and then let it simmer for around 20-30 minutes.
Allow it to cool a bit, and then blend to your desired consistency. I like it ‘rustic’ so not quite fully smooth. Add a few more basil leaves to the soup once blended. And it’s ready…so simple and good for you too. Enjoy!
