In this awful rainy windy weather, what is nicer than some weekend afternoon baking, delicious smells wafting around the kitchen and nice sweet treats to eat with steaming cups of tea and coffee and lots of chatting and tele watching! House of Cards on Netflix is calling me…
Makes 12 cakes…
- 125g unsalted butter
- 125g caster sugar
- 2 eggs
- 150g self raising flour
- 1 tsp vanilla essence
- 1/2 tsp baking powder
- 2 large apples
- 3 tbsp cinnamon (approximately and to your own taste)
- 2 tbsp icing sugar (approximately)
Preheat the oven to 180 degrees and line a 12 hole (or 2 6 hole as I have) bun tin with paper cases – the prettier the better! on this occasion mine were a mix of blue and blue polka dot cases…
In a large bowl – place the butter, softened and cubed, sugar, eggs and vanilla, sieve in the flour & baking powder and mix with a hand held or stand mixer for around 4 minutes.
While this is mixing, grate the apples into a bowl and add 1 tablespoon of cinnamon, mix together well.
At the bottom of each paper case place a small spoon of the apple & cinnamon, pour over the cake mixture, then add another small spoon of the grated apple. Do this for each case ensuring an even amount of the cake mixture into each one. Sprinkle cinnamon over the top of each cake (just a small bit).
Put into the oven and bake for around 18 minutes (time may vary depending on your own oven so keep an eye on them). Bake until they are golden on top. Cool on a wire rack.
Mix together the icing sugar and cinnamon, and using a small sieve, sprinke the tops of the cakes with the cinnamon sugar.
