Now this hardly constitutes a recipe … but a late in the week mini blog post so here it is…
- Any good white crusty bread (ideally a day or two old)
- Olive oil
- Cayenne pepper
- Smoked paprika
- Coarse sea salt
- Black pepper
Cut bread into cubes and place in a bowl. Drizzle the bread with olive oil, then liberally sprinkle the smoked paprika and cayenne pepper until the bread cubes are well coated, then a good grind of black pepper and sea salt.
Heat a pan until very hot, slightly smoking then throw in the croutons – they will cook quickly so keep an eye on them until they are golden and starting to char. Remove from the pan and add to your salad (or soup…) – these croutons are great with the warm roast chicken salad from Bill Granger’s book ‘Easy’ which I posted back in October.
