White Chocolate Clusters

I first made these at Christmas time and they were so handy to bring to family and friends but really they work at any time of year…very delicious and so so quick and easy to make. I love the mix of white chocolate and cranberries and hazelnuts however you can substitute any other dried fruits or nuts – cherries, berries, walnuts…choice is yours.

You will need: 1 Tbsp Brandy, 50g Dried Cranberries, 50g Roasted Hazelnuts 200g White Chocolate, 1 Sprig Rosemary (finely chopped).

This will make around 12 (depending on the size of your cluster!)

Warm the brandy (microwave) and pour over the cranberries. Leave to soak while you melt the white chocolate.

Add the chopped rosemary to the melting chocolate.

Once your chocolate is melted, add the cranberries and hazelnuts and mix altogether.

Spoon into clusters onto baking parchment and leave to cool and set (about an hour will do it!).
