Supper Time – Chicken Cordon Bleu

This is a really easy winter weekday dinner, warming and tasty and you can serve it with whatever you have in your fridge / cupboard – baby potatoes, salad, seasonal vegetables…

The other bonus with this recipe is that you don’t need to follow it strictly – you can vary the ingredients and amounts according to your tastes.

The basis is:

2 Chicken Breasts (alternatively you could use Turkey …)
2 Slices of Ham
40g Cheese, grated (Gruyere is ideal but nearly any good quality cheese will work)
2 Tbsp Dijon Mustard
1 Egg, beaten
50g Breadcrumbs – if you have fresh herbs, chop and mix them into the breadcrumbs for added flavour!

Preheat your oven to 180°C

Flatten the chicken breasts – my preferred method is to wrap them in clingfilm and bash (gently) a few times with a rolling pin or mallet

Spread a tablespoon of Dijon mustard on each chicken breast

Lay a slice of ham and 20g grated cheese (If you like it very cheesy add more, however I think this amount works perfect, giving it just enough melty middle!), onto each chicken breast and roll the chicken breast over on itself, secure with toothpicks!.

Chicken Prep!

Dip each chicken breast into the beaten egg and roll in the breadcrumbs

Place on a baking sheet and into the hot oven for 30 minutes

Oven Time!
Ready!
